We just did an email survey to get a feel for how we can make things better around here. A big hug and THANKS for those who gave us great feedback. We had almost a thousand responses with many great ideas as well as lots of love!

One thing many people said they wanted was ideas for pack-and-take lunches, not just for kids but for adults too.

So, I asked my sweet friend, and very busy college student, to give us her three go-to lunches that take under 10 minutes to make.

I think she did a good job!

1. My Pita Pit

Pita, hummus, vegetables
This is fast to assemble! All you have to do is get pita bread, hummus,
spinach, feta cheese and bell peppers. These are all the ingredients you
need. Just smear the hummus, add some spinach, cut up a red bell
pepper (or any bell pepper of choice), add some feta cheese and
put it in a Ziploc bag to go.

I love this one because it doesn’t get soggy by the time I get around
to eating it. It’s full of great veggies and I never feel guilty
preparing two for myself!

2. Sweet Potato Dip and Pita Chips

Sweet Potatoes

I love sweet potatoes! They are filling and actually pretty good for you. This one takes some prep time. While I am doing my homework one day of the week, I pop three or four sweet potatoes into the oven. I wrap them in foil and bake them for 2 hours at 300 degrees.

I like to keep them on hand to eat plain or to make into a dip I am currently obsessed with.

Sweet Potato Dip

Ingredients

  • ⅓ C baked sweet potato
  • 1 Tbsp of plain Greek yogurt
  • ⅛ tsp chipotle crushed pepper
  • ⅛ tsp salt
  • ¼ tsp honey

Preparation

Mix it all together and you have a delicious dip with a bit of a kick. I love it and it’s actually pretty filling, which makes it perfect for a quick lunch! I like to take it in a small Tupperware, with a few pita chips. Carrot sticks or jicama sticks would also be amazing with this dip.

3. The Trail Wrap

All you have to do is smear peanut butter on a large wheat tortilla,
stuff it with your favorite trail mix, a few dried blueberries and
dried apricots. Put it in a Ziploc bag and done!

This might sound so bizarre but it is so good! It’s filling and healthy!

    I love Red Pepper hummus.. could eat it by the spoonful, never thought of putting it in a pita or wrap.
