4th of July Salad Round-Up

4th of July Salad Round-Up

Recently Updated3

I am almost always in charge of salads for family get-togethers. I don’t know if they trust me to bring anything else :). So I thought I would put together a round up of beautiful salads for the Fourth of July. Salads are pretty easy to tailor to your liking. I usually make a big batch of dressing and then throw together salads with whatever I have in the fridge. You can even freeze salad dressing.  I am glad I can enjoy salads again–salad and I were not friends for awhile when I was super nauseous.

summer salad

I love this dressing on salads with berries, dried blueberries or cranberries, nuts or avocados. It also goes well with mangoes, strawberries and shredded coconut. Really any salad is good with it.

This is the salad I am taking to the BBQ this year. It can be served as a dip with tortilla chips, or eaten as a salad. I haven’t tried this recipe yet. I usually just put a good quality Italian dressing or Catalina dressing on the salad. But this looks simple and the dressing looks really similar to an Italian dressing.

Charred Corn and Cotija Guacamole (aka EloteEsquites Guacamole) 500 2811

Corn and Cojita Guacamole Salad by Closet Cooking

I LOVE almost all of the recipes I have tried from Closet Cooking. He does such a good job making creative dishes. This salad reminds me of when I lived in Guatemala and the charred corn they sold on the streets. The combo of charred corn and guacamole — you can’t go wrong!

Triple Berry Summer Salad by Iowa Girl Eats

I love the combo of goat cheese and berries. If you don’t love goat cheese, try feta in this salad. It would be awesome as well. I also love a roasted beets, goat cheese and avocado combo for salads. If you don’t have the strawberry balsamic try it with this dressing.

Chickpea, Avocado and Feta Salad by Two Peas and Their Pod

Another talented blogger. This salad is really simple and SO good. It is best eaten fresh because the avocado tends to be mushy and not as pretty the second day.

nectarine salad

Ultimate Summer Quinoa Salad by Yummy Mummy

A simple fresh quinoa salad. I never thought of adding nectarines into the mix.  I love the colors in this salad.

Mango Quinoa Salad

One of my favorite salads. I just made it again because mangoes were on sale and it reminded me how much I LOVE it. This salad makes good leftovers too.

Greek Salad

Greek Pasta Salad with Greek Dressing by Our Best Bites

This recipe is for a pasta salad. I haven’t made the pasta salad, but used the same ingredients with greens and the Greek dressing. The dressing would make a good marinade as well.
