Almond Joy Ice Cream

This picture makes the ice cream look more like a shake than ice cream, because I left the ice cream maker running so long it started melting the ice cream.

When we were driving home from St. George I had an almond joy concrete shake from Nielson Frozen Custard. It was SO good, that I couldn’t stop thinking about how I could recreate it at home with healthier ingredients.

So this is what I came up with….a dairy free and refined sugar free chocolate ice cream base, full of dark chocolate chunks, toasted coconut, and almonds. It is REALLY good. In fact I think it rivals the frozen custard. My in laws came over for dinner and loved it, they were surprised when I told them it was dairy and refined sugar free. I have learned that taste trumps all. I love when you can make something healthy taste fabulous, that you would eat it even if you didn’t know that it was good for you.

Something fun in this recipes is that I figured out if you melt coconut oil with chocolate chips it hardens when you drizzle it in the ice cream, making streaks of chocolate in the ice cream–so good. You can also put melt coconut oil with peanut butter to get streaks of peanut butter in your ice cream, peanut butter and chocolate ice cream is for another post!

Note: watch the coconut while toasting it, I burnt the first batch pretty good. I had to run the cookie sheet outside as smoke was everywhere, I almost dropped it because my hot pad felt like it was paper thin, the cookie tray was burning me through the cookie tray! Moral of the story get a good hot pad and watch CAREFULLY!
