Breakfast Berry Quinoa Recipe

Whenever I make quinoa, or any grain for that matter, I always 4x the amount I would make for just one meal.  Saving me some sanity, time, and dirty dishes having leftover grains already prepared for the rest of the week.  If I make a REALLY big batch I freeze part of it,.  Did you know that all grains freeze well?  A little side note when you are unthawing frozen grains heat them up with a tablespoon of water or two for the best texture.

One of the ways that I eat leftover quinoa is for breakfast.  I love it because it is easy for babies and toddlers to eat, and because it is so yummy!!!  To make it into a breakfast cereal I add cooked quinoa to a small pot, put in a bunch of chopped fruit-pears, apples, berries whatever fruit we have on hand and a little almond milk.  Then I gently heat it up so that it is warm.  With pears and apples I cook it a little longer so that it is easier for my baby to eat.  Fresh berries I like to add  them to them after heating up the cereal so they are not cooked, unless I am using frozen berries and then I add them while I am heating everything else up.  Stir in a little bit of coconut oil before taking it off the stove, this gives it creaminess and is so good for you.

I generally sweeten it with a drizzle of honey or for Skye when she hadn’t turned one yet (babies under one aren’t supposed to have honey) I would mash a banana in it for sweetness.  Generally it doesn’t need a lot to sweeten it because of the fruit.  I like to top it off with shredded coconut, dried fruit, and chopped nuts, and sometimes a splash of cold almond milk in the summer, instead of heating it up with the cereal.  For a really fun twist try dried figs, apricots, or golden raisins and macadamia nuts, almonds or walnuts.  There you have yourself  fast  protein packed breakfast, with A LOT more nutrition than cold cereal.
