Carrot Cake No Bake Cookies

I saw these carrot cake no bake cookies on Instagram from Mind Over Munch.  I was craving cookies and these looked quick and easy to make with my little girl so I thought I would give them a try.  Can I just say these little things are seriously good.

    I made these and they were very runny so I clicked on the link to the original recipe and discovered that you forgot to put the oatmeal in your ingredient list.

        I just made up a double-batch of these for a kiddo event, and the mixture is very dry 🙁 I can’t figure out if I missed a step (?)…definitely not a soft mixture that can be shaped into a ball…I’m wondering if you think extra coconut oil and nut butter would work as a binder?

    How long will these keep and should they be kept in the fridge? Making them right yum!!

      Hi Erica! I have NO idea, because they don’t last long at our house ha ha. Yes I would store them in the fridge I think they would keep longer.
