Chicken Pho Soup


Chicken Pho – Vietnamese Soup

Pho is becoming wildly popular here in the Washington, DC area.  We have tons of Pho restaurants popping up all over the place.  They are in ALL the strip malls now, usually somewhere between the pizza place, the chinese take out spot, and the nail salon.  If it isn’t in your neck of the woods yet, it will be soon.

While Pho is traditionally made with beef stock and various cuts of beef, I like to make my own lighter version at home with chicken.  It is so easy to make and tastes even better if you use your own homemade chicken stock.

Ingredients (Makes One Serving. You can easily double this.)

  • Three cups homemade chicken stock (Check out the recipe here!) 
  • Shredded chicken meat
  • 3 ounces rice noodles (I like Trader Joe’s brand, but you can use any you have on hand!)
  • 1-2 teaspoons fish sauce
  • Juice from half a lime
  • Pinch of fresh ginger

Toppings

  • Sliced white onion
  • Cilantro
  • Thai basil (Don’t use regular basil here… it just wouldn’t work!)
  • Sriracha sauce
  • Hoisin sauce
  • Bean sprouts
  • Sliced green onion

Method

Throw it all in a pot (minus the toppings). Heat through. Top with whichever toppings you like and enjoy!

    Question…what is fish sauce and where can I get it?! Thanks

      Fish sauce is a salty asian sauce usually made with anchovies. It honestly doesn’t have a fishy taste though. You can find it at almost any food store in the international section now. If you don’t have it on hand, you can leave it out and it will still turn out great.

    Do you use all the toppings at the same time or just pick and choose a few?

      My husband loves to use all of the toppings. You can pick whichever you like. If you don’t have a certain one you can always leave it out. – Liz
