Chicken with Peanut Satay Sauce

  • 4 chicken breast fillets
  • ½ bunch of cilantro, chopped finely
  • 1 red chili pepper
  • 1-2 cloves of garlic, minced
  • 1 tablespoon tamari or soy sauce
  • 3 tablespoons good quality peanut butter
  • 1 inch piece grated ginger, optional
  • 2 limes, juiced
  • ½ red onion, chopped into 1 inch square pieces
  • 2 tablespoons coconut oil, for cooking
  • 6 wooden skewer sticks
  1. Cut chicken into 1 inch square cubes. Set aside.
  2. In a medium sized bowl, mix cilantro, chili, garlic, soy sauce, peanut butter, ginger and lime juice together.
  3. Add chicken pieces and coat thoroughly.
  4. Cover chicken and place in fridge for 30 minutes.
  5. Thread alternating chicken and red onion onto skewers.
  6. Melt coconut oil in a fry pan over a high heat.
  7. Carefully place chicken skewers into fry pan, being sure to push down the chicken if necessary to cook chicken thoroughly.
  8. Cook on one side for 3-4 minutes, turn chicken to the next side, cook for 2-3 minutes and repeat until all sides are thoroughly cooked.
  9. Remove from pan and serve.
  • Serve with rice and steamed broccoli
  • Serve with Noodles, or zoodles
  • These are great to add to a summer picnic s they are yummy served cold.
