Coconut Cashew Granola

I am not sure why I haven’t posted this recipe before now. I make this granola all the time and it is one of my favorite recipes. I just made nine batches for a weekend cabin trip. Even though there will be almost 50 people there, I think I overdid it (ha ha). The good news is it is really easy to put together. Just waiting for it to bake takes time. You could also up the nutritional profile of this granola by adding in chia seeds or flax seeds. I just keep it pretty plain. I think you would be better off just sprinkling some chia seeds on after, while you are eating it, to preserve the most nutrients anyway.  If you haven’t made your own granola before, it is really easy.  Try this recipe and you will never go back.

This is a picture of my little boy helping me stir. Let your kids help you make this. It is really easy — a lot of dumping and stirring, and then just take it over and bake.

    I noticed that you don’t mention soaking the oats, does the phytic acid get eliminated some other way during the cooking? And if not, will your recipe still work if the oats are first soaked??

      Hi Tomara!
      I am not sure if the recipe will work if you soak the oats first. I don’t think that it would because it might be too soggy. Sorry I haven’t made it that way.

    This recipe sounds easy but my sister is allergic to coconut. What would you recommend using instead of the coconut oil?

      Hi Karen! You could use any oil that you like. Just substitute equal amounts. I think olive oil would be too strong though. Try a nut oil like almond oil or walnut oil.
