Easy Maple Cream Cheese Frosting Recipe (naturally sweetened)

It is hard to find good frosting recipes that are naturally sweetened, near impossible. That is why I love this frosting recipe, it not only tastes amazing but it is sweetened with maple syrup. I like to top my favorite carrot cake cupcakes with it, and of course you can use it on anything else that your creative mind comes up with. If the frosting is too soft use ultra gel.  Keep it refrigerated it softens when warm without ultra gel.

Ultra gel can be found online at carnetfoods.com or at your local health food store.  Ultra gel is made from corn. Ultra gel makes fabulous freezer jam, it is a thickener that you can use without cooking. So you can make your jam fresh. The other reason it makes great freezer jam is because you don’t have to be exact with the ratio of sweetener to fruit, just mix it to your liking and add enough ultra gel to set it up. It also is flavorless another big bonus. I have also seen it used to thicken gravies and sauces.

Easy Maple Cream Cheese Frosting

8 oz. Cream cheese
4-6 T maple syrup to taste
1/2 C brown sugar (or for a less processed sweetener use coconut sugar)
1 tsp cinnamon
1 tsp pure vanilla
optional: 1 T Ultra Gel (food thickener found at health food stores or carnetfoods.com)

Blend the sucanat in a high-powered blender until fine. Add the cream cheese, maple syrup, and canilla and blend until smooth.

Tip: If the frosting is not thick enough to hold onto the cupcake, whip the Ultra Gel into it and let it sit for 5 minutes.[/print_this]
