We have so much abundance from our garden and our neighbors gardens that I was looking for more recipes to use up all of the zucchini and tomatoes. I found this fresh pasta sauce, it is so fast, and requires no cooking. Which is nice to not be over a hot stove in this heat wave we have had. Instead of putting it over pasta I made it into a wrap. I added fresh spinach, shredded zuchinni (I tossed the zuchinni in a little bit of lemon and salt and pepper, with olive oil and sauted them for just a minute), and topped it all off with a little bit of feta. Scotty loved it and Isaiah finished his without any complaints so I think it was a winner. Super fast, super easy, and no cooking involved if you don’t cook the zuchinni. What I was going to make was fresh pasta sauce with zuchinni noodles, but I thought the boys wouldn’t go for it so I just made it into a wrap. But now that I got a juliene peeler to make zuchinni noodles I am going to try it with this sauce.
I first had zuchinni noodles at The Pizza Factory, they are so yummy topped with sauce. So I tried making my own grating the zuchinni on a box grater, but they just weren’t the same. The solution to making great zuchinni noodles a juliene peeler. It is a tool that makes skinny little noodles kind of like angel hair pasta. I haven’t had time to make zuchinni noodles with the julienne peeler for dinner yet, but I will let you know how it goes over.
