We have so much abundance from our garden and our neighbors’ gardens that I was looking for more recipes to use up all of the zucchini and tomatoes. I found this fresh pasta sauce. It is so fast and requires no cooking, which is nice to not be over a hot stove in this heat wave we have had.
Instead of putting it over pasta, I made it into a wrap. I added fresh spinach, chopped basil, shredded zucchini (I tossed the zucchini in a little bit of lemon juice, salt, pepper and olive oil, and sauteed the zucchini until soft), and topped it all off with a little bit of feta. Scotty loved it and Isaiah finished his without any complaints so I think it was a winner. Super fast, super easy.
What I was going to make was fresh pasta sauce with zucchini noodles, but I thought the boys wouldn’t go for it so I just made it into a wrap. But now that I got a julienne peeler to make zucchini noodles I am going to try it with the sauce.
I first had zucchini noodles at The Pizza Factory, they are so yummy topped with sauce. So I tried making my own grating the zucchini on a box grater, but they just weren’t the same. You need a julienne peeler. It is a tool that makes skinny little noodles kind of like angel hair pasta.

Fresh Tomato Basil and Zucchini Wrap
Marinara Sauce (good quality from a jar, or the recipe above is fabulous!)
Zucchini shredded with a box grater
1. Saute the shredded zucchini with a drizzle of olive oil and a squeeze of lemon juice. Salt and pepper the zucchini so it tastes good.
2. Assemble wrap: Whole-grain tortilla, spinach, basil, sauteed zucchini, feta cheese and marinara sauce. Roll the whole thing up and eat right away.
