Herbed Popcorn

There are so many things to love about summer! No schedules, no homework and most of all, less time in the kitchen. We love to pack up and head to the mountains for a hike or to the pool to catch a few rays. My backpack is always full of healthy snacks, but it can be a bit of a challenge to keep it fresh and exciting when it comes to kids and adults. One of our favorite treats is popcorn. Its inexpensive, easy to make, and most of all super versatile when it comes to changing up the flavor. Here is one of our go-to recipes for a salty and savory treat. It’s also perfect for a movie night under the stars.

Ingredients:

10 cups air popped popcorn (this is usually one batch)

Fresh Rosemary

¼ cup Olive oil

2 garlic cloves, peeled and minced

¼ cup Parmesan cheese

½ tsp garlic salt

Cracked black pepper

 Method:

In a small saucepan, combine olive oil, garlic, and one sprig of rosemary. Allow to heat up and simmer lightly. Once it starts to simmer a little more rapidly remove from heat.

Add garlic, salt and pepper. Pour over popcorn.

Once cooled add the cheese and serve immediately.

Will keep in airtight container for 2 days.

Great topper for soups and salads in place of croutons!

I love all things green and the more colorful my plate is, the happier I am. Vegetables don’t have to be boring! My motto is eat good, feel good, look good. When we eat good food and treat our bodies with respect, the rest falls into place.
