Homemade Real Food Peanut Butter Cups

This time of year, I can’t seem to get enough chocolate. Let’s face it, I can’t get enough chocolate any time of year! And when you pair chocolate with peanut butter, I’m pretty much done for. What is it that makes them such an amazing combination?

When I decided to cut processed food, one thing I missed the most was my beloved peanut butter cups. Fortunately, it doesn’t take much to make your own using real, healthy ingredients.

The best way to melt the chocolate for this recipe is in a double boiler. If you don’t have one, you can put a heat safe bowl over a pan of water, and that will work the same.

Ingredients:

  • 1/2 cup natural peanut butter
  • 1/4 cup raw honey
  • 1 cup chocolate chips (I like a nice dark chocolate from Enjoy Life brand)
  • 2 tablespoons coconut oil

Instructions:

  1. In a double boiler, melt chocolate chips and coconut oil together.
  2. Mix peanut butter and honey together.
  3. Form peanut butter mixture into round shapes about the size of a quarter (you could also make fun hearts or other shapes).
  4. Using two forks, dip the peanut butter shapes into the melted chocolate, then place on parchment paper to cool.

**These are still a treat, so enjoy in moderation.
