How To Bake With Coconut Oil

How do you bake with it?

Subbing in coconut oil for margarine  shortening, or even butter is really easy.  If a recipe calls for 1 cup of margarine  shortening, or butter, you would substitute in 1 cup of coconut oil.  I have found that sometimes coconut oil tends to make things a little oilier so for cookies I usually do a little bit less.  So if the recipe calls for a stick of butter (8 tablespoons), I would use 6 tablespoons of coconut oil.   A good trick is to bake one cookie first, and then see what happens.  If the cookie spreads to thin like a pancake, add a little bit more flour.  If the cookie doesn’t spread at all and looks like a little mound, then add some more coconut oil in to help it spread out.

Where to get coconut oil?

I buy my coconut oil through Mountain Rose Herbs,  recently they have recently increased their prices, such a bummer.  Even with the price increase they are still one of my favorite brand as far as flavor goes.  To save a little money this last purchase I bought Tropical Traditions brand through Amazon, I saved a bunch going through Amazon and not directly through their site.  I like Tropical Traditions but I like the flavor just a little bit better from Mountain Rose Herbs.  The next 5 gallons I buy will be through Alpine Food Storagee.  They get the coconut oil straight from  Africa, it has an amazing taste, and it is the best price I have found.  Too bad I already bought my 5 gallons when they got their’s in stock!
