Mango and Black Bean Quinoa Salad

This is a meal a dear friend brought me after I had Skye. It was so nice to get a home cooked meal! We were in the middle of moving and Skye was just born. There is something about a home cooked meal that is so comforting. Especially after having a baby. This meal hit home because especially after just giving birth you don’t want heavy, creamy food. it is nice to have something light and refreshing. If anyone you know is having a baby or is in need of a home cooked meal, spread the love and make them this mango and black bean quinoa salad.

I even added some fresh corn to a batch. Fresh corn off the cob in salads has been a summer staple in our house.

Cutting mangoes can be a little tricky because of the large pit. I learned this little trick to cutting mangoes, living in Guatemala on my LDS mission.

First cut the cheeks off the mangoes.

Then cut a tic tac toe pattern in the mango flesh

Pop out the mango cubes and either cut them off with a knife or scrape them off with a spoon. Or if you aren’t using them in this salad you can eat them right off the skin this way!

    Desiree- Long time no talk to… I popped onto your blog and have been trying some of your yummy recipes. This mango quinoa salad was delicious. My kiddos and husband loved it. Next time I need to buy an extra mango or two just to eat. Love your blog and your cute family. It looks like all is going well.

    I must tell the world- THIS SALAD IS TO DIE FOR! My kids even loved it and they are pretty picky, so that says a lot!!
    I made it twice already, used Romano beans the 2nd time because I was out of black beans. It was just as tastes, but we do prefer the black ones
