Mango Avocado Salsa

I rarely cook fish.  I know it’s so good for me especially in the second trimester, while the babies brain is developing, but I rarely think to make it.

I think it is because it doesn’t make great leftovers, and I am all about leftovers.  Plus it can be expensive.  After I made this salmon I was reminded how much I loooove it, and just how fast it comes together.  I am going to start making this pan seared salmon more often.

We just went to the ultra sound.  It is such a miracle what our bodies can do.  Sometimes I forget.  You just feel like your body is being overtaken.  Seeing that little sweet baby reminded me what an amazing gift it is to be able to be pregnant.  We didn’t find out what we are having-it’s going to be a surprise.  I am so excited.  With both my other babies I found out.  So we will see how this one goes.  I have a little boy and a little girl so we have everything we need.

Ok on to the mango salmon…….

    Yum! I’m in Alaska, so plenty of Salmon to be had here! I don’t often think of ways to fancy it up, though! I have frozen mango from Costco (not much of THAT here!) right now that I think I’ll thaw to make into salsa! Thanks!!
