Better Than A Bottle, Spaghetti Sauce (super easy)

I tried this recipe because Mr. Italy himself, Mario Batali, created it. It quickly became my favorite right after I tasted it. Since then I have made it a number of times. Usually I play around with recipes and add to or take away ingredients, not this one, I stick to it like a loyal friend, and like a loyal friend it never lets me down.

The BEST Spaghetti Sauce
1/4 C olive oil (this sauce is rich and oh so good, but if you want a lighter sauce you can half the olive oil)
1 onion
4 cloves garlic
3 T fresh thyme
1/2 C carrots, diced
2 cans, 28 oz., of whole tomatoes
Dash of red pepper
Heat olive oil, and saute the onion and garlic until onion is soft. Add thyme and carrot, cook about 5 more minutes until the carrot is soft. Add tomatoes and juice of tomatoes and bring to a boil, stirring often. Lower heat and simmer 30 minutes util sauce is as thick as hot cereal. Season with salt and pepper.
Note: Sometimes I will add a pinch of raw sugar (sugar would work too) to balance it all out.  For some reason it makes the most amazing sauce.

    Is the recipe supposed to be 1/2 of a carrot or 1/2 cup carrots or something similar? Just wanting to double check :) thanks! Can’t wait to try this out!

      Yeah! So happy you are doing the challenge! Ok for me the sauce has always been really thick? But if it is too thin, I would add in a little arrow root starch or non gmo corn starch and that will thicken it. Hope that helps!
