I have always wanted to this recipe for homemade Mac & Cheese for awhile now.  I have made this one and loved it.  But, it didn’t work well with gluten free noodles they turned to mush.

This recipe looked simple enough and didn’t have a lot of  ingredients. It comes from Liz at the Food Nanny.  She is one of the presenters at The Mom Conference.

Liz is seriously so wise.  I look up to her as the kind of mom I want to be.  She raised 8 kids!!!  In the interview she talks about how family dinner was the glue that kept their family together.  The kids knew what time it started and it was a constant in their home.  I loved listening to her reflect back now after all the kids are gone and how memorable that time was with her family in our interview.  I think about that often.  What will my kids remember from their childhoods.  She said that each of her kids uses the same system she used to get dinner on the table with their own families.

She inspired me, because with Scotty traveling so much it is easy to resort to quesadillas for dinner every night.  I think it also gives the kids a good constant to know they can plan on it.  She has an awesome system that she uses to meal plan.  It makes it a lot faster and the kids can take part in it too.   Check out her interview here at The Moms Conference.

Oh and I can’t forget about her mac ‘n cheese.  It is seriously easy and tastes awesome.

Simple Homemade Mac & Cheese

Recipe from The Food Nanny

  • 1 1/2 cups uncooked elbow macaroni, whole grain possible (sub gluten free noodles if needed)
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour (sub in gluten free flour, if needed)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 cups milk
  • 2 cups shredded Cheddar or Colby cheese


  1. Preheat the oven to 350 degrees and lightly grease a square baking dish.
  2. Cook the macaroni according to package directions. Drain and set aside.
  3. Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper. Add the milk; cook and stir until the mixture is thick and bubbly. Decrease the heat to low and add the cheese. Stir until the cheese is melted.
  4. Combine the cheese sauce with the macaroni and place in the prepared baking dish. Bake 35-40 minutes or until heated through.

*This dish can be made ahead and refrigerated. When ready to bake, bring to room temperature and bake as directed.

    My husband’s grandmother has a similar recipe we still use. Called Grandma’s mac and cheese. We use the whole grain noodles, and a white sharp cheddar cheese. It is his favorite recipe. It makes for great comfort food. 🙂
