Superfood Quinoa Cookies

I promised you I would get back to quinoa…..

If you have missed the last two posts we are featuring quinoa a powerhouse grain and recipes to use it.  My goal is to  give you lots of options on how to use it, because sometimes we buy things we know are good for us and they sit in our pantries-I am guilty of this as well.  In fact right now I have some lentils sitting in my pantry as we speak staring me down.

Last but not least…. dessert try out these cookies they are fabulous!!  You can add cooked quinoa to cookies and you can’t taste it.

I got the idea for these cookies from Chef Brad.  You can use whole wheat flour in them or you can try out wonder flour.   If you are wondering what wonder flour is  sheck out my You tube video how to make it!!  It is the most fabulous flour for cookies, cakes, and muffins-so light and fluffy.   You can also use coconut oil in them.   Here is why I love coconut oil.

O.k. so there you go a cookie that not only tastes amazing but is a little bit better for you than the usual cookie.

    Is the “1/2 cup coco nut” = “1/2 cup of shredded coconut?” Or is it something else?

      Hi Peter! Good question yes a half cup of unsweetened shredded coconut. I’ll have to make that more clear in the recipe.
