 Freezer Meals for Baby Ward

I am 39 weeks pregnant and ready for this sweet baby to come any day now!  I can’t wait to find out what we are having.  This is number three for me, I have a little boy and a little girl so we decided to make it a surprise.  I figure there aren’t many times as an adult that you get a real surprise anymore.  It feels almost like Christmas.  As it gets closer I am dying to know what it is.

The last few weeks of my pregnancy  I have had a few weird complications.  My platelet counts in my blood keep dropping.  They have had to put me on steroids and try to artificially get them up before I deliver.  I can’t have an epidural, because of how low they are, unless they come up.  I am ok with not having an epidural, because my last two babies I haven’t had an epidural either, but taking steroids aren’t fun.  I feel for those that have to take them long term.  It is motivating to me to do all that I can now to hopefully avoid having to be on different medications in the future. Some sicknesses and health problems are out of our control-like my platelet dropping-and other sicknesses, but everybody benefits from eating fresh food and exercising.

So…freezer meals.  I prepped some so I can have meals in the freezer ready to go for those crazy new born days.  I LOVE newborns and that cuddly phase.  I want to enjoy it as much as possible.  I also want as much in order as possible because it feels chaotic in the beginning when you aren’t sleeping and taking care of the little one 24/7.

So here is what I got around to making:


Chicken Enchilada Soup

I freeze this soup without the sour cream.  I like to add the sour cream after I heat the soup back up.  I like the soup without sour cream as well, my kids like it better with.  Sometimes I do half Greek yogurt half sour cream.  Sometimes I do all sour cream.  You can also just serve it and add as much as you would like to your individual bowls.  This soup has a butternut squash, potatoes, and red peppers in it all blended so even picky eaters love this one.

I actually just roast the tomatoes and then freeze them when they are in season.  I make the rest of the soup in the middle of winter.


Crock Pot Shredded Chicken

This is seriously SO easy and you can use it in so many different recipes.  I froze some of the chicken shredded and then used some to make the 5 ingredient white chicken chili and chicken tortilla soup.  I need to post that recipe soon, it is really good.

5 Ingredient White Chicken Chili

This is the easiest soup ever and it is really light.  All you do is dump 5 ingredients in the pot and let it heat up.  Choosing a good green salsa is the key to making this soup taste good.  You can top it off with whatever you choose or eat it as is.


Sweet Potato Burritos

I make the filling for these enchiladas and instead of making them into enchiladas I rolled the filling up in tortillas to make burritos and froze them.  You can add cheese if you want to the burritos or they are good without too.  I want to try the black bean burritos pictured above from Mel’s Kitchen Cafe.

I made the filling and froze it so I could have it on salads.  I also made some burritos as well.  I froze them before the step that you cook the burritos to toast them.  When I dethaw them I will do that step.

A Big Bag of Spinach 

I buy the big bag of spinach from Costco and freeze it.  I put the whole bag straight in the freezer for green smoothies.  Green smoothies are awesome for nursing.

Cut Up Frozen Peaches

My neighbor dropped off a box of peaches from her tree so I cut them up and froze them.  I love to make a smoothie with orange juice, spinach, frozen peaches, and a banana. My kids like this smoothie really thick like ice cream.  To make it more like ice cream I just add  a little frozen orange juice concentrate instead of juice and maybe a little coconut water or almond milk to get the blender going.

Frozen Berries

I just buy the big bag at Costco for smoothies.  I have been trying to get to the U-pick to pick some but I don’t think that is going to happen before the baby comes.  My current go to smoothie is frozen berries, coconut water, chocolate protein powder, and greens.

That isn’t everything in my freezer but just some of the things I have prepped for baby Ward.  Wish me luck.
